Types of course

Rosemary's courses at Swinton Park are available in two formats - day courses and residential courses. For 2009 there are both two day and four day residential courses available. Her programme suits all interests and levels of experience and ability.

Day courses
Rosemary's programme for day courses covers a wide range of techniques and styles of cooking. The recipes for each day have a theme, and a wide range of complementary dishes are prepared.

Residential courses
Rosemary's courses concentrate on the classical preparation of food, and mastering the essential techniques. These include patisserie, baking, sauces and soufflés, boning and filleting, amongst many others.

Rosemary's kitchen is always busy and you will be amazed by the scope of each course - her underlying philosophy is that the only way to learn is by hands on experience and she ensures that every guest cooks to the best of their ability.

The four day courses offer a great range of cooking experience on the broad theme of classic cookery. The two day courses are themed on various styles of cooking, such as French and Italian, Dinner Parties, Fish and Modern British. Rosemary also offers a Back to Basics course, for cooks who want to master the basic techniques before venturing on to a more specialised course.
