Ingredients for the sponge:

  • 100g caster sugar
  • 75g self-raising flour
  • 25g of good quality cocoa powder

  • 200g mascarpone
  • 70g good quality raspberry jam
  • kirsch liqueur
Ingredients for Ganache:

  • 155g 70% dark chocolate
  • 155ml double cream
