Ingredients for hot cross buns:   

  • 400g strong plain flour
  • 150g stoneground wholemeal flour
  • 2 teaspoons mixed spice
  • 2 teaspoons cinnamon, ground
  • 60g cold butter
  • 35g caster sugar
  • 15g fresh yeast
  • 300ml full fat milk, blood temperature
  • 1 egg
  • 5g salt
  • 150g raisin and sultanas

For the glaze and cross:

  • Shortcrust pastry
  • 100g sugar
  • 3 tablespoon water
