- 400g strong plain flour
- 150g stoneground wholemeal flour
- 2 teaspoons mixed spice
- 2 teaspoons cinnamon, ground
- 60g cold butter
- 35g caster sugar
- 15g fresh yeast
- 300ml full fat milk, blood temperature
- 1 egg
- 5g salt
- 150g raisin and sultanas
For the glaze and cross:
- Shortcrust pastry
- 100g sugar
- 3 tablespoon water
