Onion Soup

Method:

Soften the sliced onion in the butter and oil on a low heat.  Now add a sprinkle of sugar and continue cooking until the onions are golden brown, now add the flour and then the stock.  Simmer for at least one hour.  Taste for seasoning.  Pour into the soup bowls and place the croutons on too, then sprinkle a good amount of cheese.  Place under the grill until brown.  Serve.

  •         1 kilo Spanish onions, 700g sliced
  •         60g butter
  •         3 tablespoons extra virgin olive oil
  •         2 ½ litres good beef stock
  •         3 tablespoons flour
  •         8 tablespoons gruyere, finely grated
  •         Sugar
  •         Brandy, optional
  •         8 rounds of French bread
