  • 1 onion, finely chopped
  • 2 tsp sugar
  • 2 cloves garlic, finely chopped
  • 1 tablespoons tomato purée
  • 1 tablespoons basil leaves, chopped
  • salt and pepper
For the toppings:

  • Mozzarella, Ricotta, Parmesan, Goats’ Cheese, Cheddar, Dessert Cheese
  • Artichoke hearts (tinned), Aubergine, Mushroom, Onion, Peppers, Fresh Tomatoes, Black Olives, Chilli, Rocket, potato, garlic, broccoli, and pineapple.
  • Basil, Thyme, Marjoram, Sage, Parsley, Rosemary
  • Mussels, Cockles, (both must be cooked in white wine), Anchovies (tinned)
  • Morta Della, Salami, Ham, Parma Ham, Bacon, Cooked Chicken.
