Rosemary's Cupcakes

Rosemary's cupcake recipe makes 12 large cupcakes. Oven temp: 170C

You will need the following equipment: 

  Piping bag - Medium and large
  Muffin cases and muffin trays
  Pretty cup cake cases

Method:

Cream butter and sugar together till very soft, now add the eggs one at a time, each time making sure it is fully incorporated in the mixture.  Add the zest of the orange and fold in the flour and corn flour and put into 12 cases in the tins.  Put in the oven and bake for 25 minutes.  Cool and cover in cream cheese topping and decorations.

Method for the cream cheese topping:

Whisk the cream cheese until nice and light then sift in the icing sugar and mix well.  Lightly whip up the double cream and fold into the cream cheese mixture.
