Ingredients for Lamb shanks and preserved lemons

Ingredients:

  • 4 lamb shanks
  • Olive oil
  • 2 medium onions, finely sliced
  • 8 cloves garlic, finely chopped
  • 1 small hot red chilli, finely chopped
  • ½ green chilli, finely chopped
  • 2cm ginger, chopped
  • 1 teaspoon garamasala
  • 2 teaspoons cumin seeds, crushed
  • 1 preserved lemon, skin only, finely chopped
  • 2 sweet potato, cut into 1 cm dice
  • 1,200 mls chicken stock
  • 2 large tomatoes, skinned and seeded and diced 1cm
  • Juice of 2 lemons
