Ingredients:
- 4 lamb shanks
- Olive oil
- 2 medium onions, finely sliced
- 8 cloves garlic, finely chopped
- 1 small hot red chilli, finely chopped
- ½ green chilli, finely chopped
- 2cm ginger, chopped
- 1 teaspoon garamasala
- 2 teaspoons cumin seeds, crushed
- 1 preserved lemon, skin only, finely chopped
- 2 sweet potato, cut into 1 cm dice
- 1,200 mls chicken stock
- 2 large tomatoes, skinned and seeded and diced 1cm
- Juice of 2 lemons
