Roast Leg of Lamb with Cauliflour Cheese and Broccoli Spears and Beans

Method
Oven 200c
First ask your butcher to remove the the pelvic bone from the joint, this will make it easier to carve.
Cut the garlic up into thin pieces and make a few slits through the skin and deep enough to push the garlic in . Take a roasting tray and put in the sliced onion rosemary and the rest of the garlic. .Heat a frying pan and drizzle in some oil, brown the meat all over, place the lamb on top of the onion and put into the oven for 1 hour 20 minutes approx basting a couple of times during the cooking on the second basting brush the redcurrent on. ( 1 allow 15 minutes to 450g plus 15 minutes extra if you need it more done add 5 minutes on to the 15) Always allow to rest for at least 15 minutes after taking out of the oven, this allows you time to make a gravy.
Put the roasting pan onto the heat, remove the excess fat with a spoon, now and add the red wine taking up all the lovely juices and burnt bits, now add the redcurrent jelly mix well, reduce till it starts to thicken, now add the tomatoe puree, sprig of rosemary chicken stock, mix the butter and flour together add to the pan simmer until it starts to thicken again. Put through a fine sieve into a clean saucepan, season
This cauliflower can be done well in advance. First cut the cauliflower into florette, put into a saucepan and cover with the milk, broil and simmer for 10 minutes strain and reserve the milk into a bowl and put the cauliflower into a baking dish and leave to one side. Now make the cheese sauce put the butter into a small saucepan and melt, add the flour and mix well until it becomes a roux. Now add the reserved milk, whisk and bring the sauce to simmer for 5 minutes, make sure all the roux has been well mixed . Season, now add the cheese and a good pinch of cayenne. Pour over the cauliflour and sprinkle on the breadcrumbs and put into the oven for 15 to 20 minutes.
To cook the broccoli, the first stage can be done in advance. Bring a large saucepan of water to boil and cook the broccoli for 3 to 4 minutes refresh in cold water, now cook the beans in boiling water for 3 to 4 minutes refresh.
When you are ready to serve heat the butter in a pan and toss the beans and broccoli together and season well.
Everything can be done in advance except the meat and gravy this is good if you have a lot of people coming for a meal.
