Confit of Salmon with Courgette Spaghetti

Salmon:
- Olive oil, enough to cover
- 4 fillets of Salmon, skin on, 180g (6oz) each
- 3 star anise
- 8 pepper corns
- salt and pepper
Courgette spagetti:
- 4 courgettes, trimmed
- 1 tbsp olive oil
- 1 red chilli de-seeded and chopped
- 1 clove of garlic, finely chopped
- 1 tablespoon finely snipped chives
- Salt and pepper
Deep-fried Shallots (optional):
- 4 shallots
- 1 tablespoon plain flour for dredging
Eastern Vinaigrette:
- 150ml extra virgin olive oil
- Juice of 1 lemon
- 2 tbs light soy sauce
- 1 tsp sake
- 1 tsp mirin
- 1 tsp caster sugar
