Confit of Salmon with Courgette Spaghetti
Ingredients

Salmon:

  • Olive oil, enough to cover
  • 4 fillets of Salmon, skin on, 180g (6oz) each
  • 3 star anise
  • 8 pepper corns
  • salt and pepper

 

Courgette spagetti:

  • 4 courgettes, trimmed
  • 1 tbsp olive oil
  • 1 red chilli de-seeded and chopped
  • 1 clove of garlic, finely chopped
  • 1 tablespoon finely snipped chives
  • Salt and pepper

 

Deep-fried Shallots (optional):

  • 4 shallots
  • 1 tablespoon plain flour for dredging

 

Eastern Vinaigrette:

  • 150ml extra virgin olive oil
  • Juice of 1 lemon
  • 2 tbs light soy sauce
  • 1 tsp sake
  • 1 tsp mirin
  • 1 tsp caster sugar
