- 4 small, plump Dover soles
- 38 prawns or squat lobsters, cooked
- 220 g salmon fillet, skinned and boned
- 300 ml double cream
- 1 egg-white
- 1 teaspoon salt
- 60 g butter
For the sauce:
- 2 tablespoons wine vinegar
- 2 tablespoons white wine
- 140 g butter
- 180 ml double cream
- 2 tablespoons dry vermouth
- 1 tablespoon chopped chives for garnish
