Ingredients

Ingredients:

  • 4 small, plump Dover soles
  • 38 prawns or squat lobsters, cooked
  • 220 g salmon fillet, skinned and boned
  • 300 ml double cream
  • 1 egg-white
  • 1 teaspoon salt
  • 60 g butter

 

For the sauce:

  • 2 tablespoons wine vinegar
  • 2 tablespoons white wine
  • 140 g butter
  • 180 ml double cream
  • 2 tablespoons dry vermouth
  • 1 tablespoon chopped chives for garnish
